Artistically Asian – Stampin’ Up! Card

Hello there,

I put the first bit of ink on my new stamp set, Artistically Asian today.  Another wonderful stamp set that has some very useful sentiments in it and nice calming images.

This stamp set’s images look very nice as silhouettes, which I love to use in scenes, so dramatic!  Also, so easy, since you don’t have to worry about coloring the images, rock!  That is just how I used one of the images today in my project.  I hope you like it and find yourself inspired to get inky today.

On another note. . . . . .

I recently had a jam session, lol.  Not musically, but by really making and canning jam.  I love to make jam this time of year when the cherries and berries are in abundance.  For one, it’s great to have your own jam to eat all year and plus, they make great gifts.

A little reminder, to label your jars easily, punch or die cut 2.5″ circles from card stock and put them under the top ring of your jar lid.  It will fit nicely, the ring holds it on and there will be no label to have to scrub off of your canning jar when you empty that yummy goodness.

I hand write on my circles, but you can surely use a word processing program and print it out on card stock and then die cut or punch the circles out.  Note, the 2.5″ circle fits perfect for the regular mouth jars, you will need larger circles for wide mouth jars.

Salad, Salad, Salad

Hi All,

It’s been a crazy busy day already today.  Mondays always are, right?  It is 10:00 a.m. and I’ve been to the gym, grocery, put dinner in the crock pot and washed the car.  My feet sure have hit the floor running, so much to do.

I have been losing weight, 26 lbs since July in fact, woohoo!  I have much, much more to lose but at least the scale is going in the right direction now.

This morning I wanted to share with you a little tip on preparing salads.  If you are like me, you bring home fresh veggies and put them in the vegetable crisper in the refrigerator and then promptly forget about them and then throw them away the next time you come home with fresh veggies.  Because I was to lazy to pull out all the ingredient to make a salad every day.  Well here is a way to save you some money, time and your waist line.

The first thing you do when returning home from the grocery is to pull out your veggies from the grocery bags, put them on the counter, clean them, and put them right into quart canning jars.   Layer the veggies in your jars according to firmness.  Firmest veggies on the bottom.   These will keep for some time in the refrigerator on the top shelf, right where you will see them every time you open that refrigerator door.  They are super easy to have for lunch or dinner.    Pull one out, add salad dressing, eat from the jar or get fancy and use a plate, lol.

You can put anything you like in them, but skip the croutons, they get soft.  Grill chicken is great in these.  🙂

Carrots, Tomatoes and Jars, Oh My!

Hello there,

If you follow my blog you probably already know that I love to grow and can my own veggies.  I’m not going to lie to you, it’s hard work.  Boy is it worth it though in the Winter when you are eating your canned vegetables that taste very near what they tasted like right out of the garden with no preservatives and other yucky chemicals added.

Have you ever thought of the energy that it takes a gardener to grow and preserve their harvest.  As I was canning this week that was very much on my mind.  For instance, this is what I did to eventually have dozens of jars of carrots for Winter.

Prepared the garden for seeding, planted the seeds, spent months watering and weeding those carrots.

Dug them up.

Peeled and chopped them up.

Canned them and then sat back for a just a moment and marveled at what I had achieved, because it was off to the next canning project, Spaghetti Sauce.

Many, many jars of Spaghetti Sauce and Salsa that used up many of the tomatoes, onions and peppers that I grew.. .. . . . .Pears should be ripe soon, grin.  I just love this!

So that is what I have been up to for the past few days.  So how does your garden grow?

25th Anniversary, Wine and New Weekly Deals

Hello There,

Remember this strawberry goodness I grew, well some of it ended up like this. . ..  what better way to use berries, right?

I’m a new home wine maker and I have been storing these three gallon jugs of Strawberry, Mixed Berry and Blue Berry wine in a closet for a few months until they were ready to bottle.  Well today was the day.. .. . . . .

This is a photo of the Strawberry wine after bottling.  Now more waiting. . .. 9 more months of waiting.  Can I wait that long, time will tell.

If you are interested in wine making check out You Tube and of course there are many books on the subject.  It’s not difficult and it’s fun to make and fun to drink too, grin.

Today Russ and I are celebrating our 25th anniversary.  It seems like yesterday we were this young.  But, like fine wine it only got better with time.  I’m looking forward to spending many, many more years with the love of my life.  Cheers Baby!

Crazy Gardening Time

Hello there,

I’ve got a chicken coop and run to give a good Summer cleaning too this morning so I thought I would do a quick post regarding my other love, gardening.  My garden is in full swing and with all the rain we have had here in Ohio the entire month of June and now in July my veggie beds are overflowing.  This is just what I picked this morning and it pretty much looks like this every morning.  Between squash, zucchini, cucumbers and peppers my refrigerator can only hold so much.  So I give away a great deal of vegetables to neighbors, Russ’ co-workers and stamp class attendees, lol.  Pretty much everyone we are in contact with.  🙂

I also freeze some veggies. Here is how I freeze my zucchini.

I first wash my zucchini well, of course.  Then I use my Kitchen Aide Mixer and the shredding attachment and shred a bunch and put 2 cup portions in quart freezer bags.  I squeeze all of the air out of the bags that I can before sealing them.  Then I put the small bags into a 2 gallon freezer bag and into the freezer.  Thats it!   I freeze them in 2 cup portions because that is what the majority of my recipes call for.    That way I can pull out one small bag when I want to make zucchini bread or cookies.  The shredded zucchini is also good to slip into pasta dishes or soups.

In The Kitchen – Moose Munch

Hello There,

I’m in the kitchen today whipping up some little gifts.

Inside these bags is the most wonderful snack.  Just beware it’s addictive!

Moose Munch is a wonderful mixture of homemade caramel corn, peanuts, tiny Reeses and chocolate, YUMMY!

I put the Moose Munch in the Petite Cafe Gift Bags (135826) and one recipe filled 10 bags, less the snacking along the way, lol.  These bags are food safe, have a poly coating inside and tin tie closure.  🙂  I did a quick tag for the front and used the Moose  stamp from Visions of Santa stamp set.  Used my printer to put “Moose Munch” title on the card stock.

Moose Munch Recipe

Carmel Corn
3-4 quarts popped corn
1 stick of butter (no substitutes)
¾ Cup brown sugar
½ tsp salt
¼ Cup corn syrup
1 tsp baking soda
Put butter, brown sugar, salt and corn syrup in a microwave safe bowl. Microwave until it boils. Once it come to a boil remove and stir. Return to the microwave and cook 1 minute longer.
Remove, add baking soda and stir well. The mixture will get lighter in color. Pour mixture over your bowl of popcorn and stir for a few moments. Put in the microwave and cook for 1 minute. Stir the popcorn again. Your popcorn should be pretty well coated.

Moose Munch
3-4 quarters Caramel Corn
1 bag chocolate Chips (I used semi sweet)
½ cup peanuts
1 small bag of miniature Reeses
2 Tablespoons vegetable oil
Spread caramel corn out on parchment paper lined cookie sheets. Sprinkle the peanuts and Reeses over the Caramel Corn.
Put chocolate chips in a microwave safe bowl with the vegetable oil. Microwave 1 minute, stir and microwave one more minute.
Pour melted chocolate in a plastic bag and clip the bottom point of the bag off. Drizzle chocolate over Caramel Corn. Put the cookie sheets in the refrigerator for 30 minutes until chocolate hardens. Break the Moose Munch up and put in containers.

In the Kitchen – Freezer Friendly Sweet Potato Casserole

Happy Thanksgiving!!!   I am so very thankful for my family and friends and that includes you.  I hope your day is filled with family, friends and all that you are thankful for as well.

Sweet Potato Casserole

One thing about freezer meals is that you can shop when things are on sale.  Always around Thanksgiving the Sweet Potatoes are on sale at a really good price, at least 1/2 off.  So, I cannot resist a bargain so I bought 20 sweet potatoes and decided to make Sweet Potato Casseroles.  Why not, one for Thanksgiving and 3 more to stash away in the freezer to be eaten at a later date, mmmmmm.  🙂

Here is how I made mine:

I washed and baked my potatoes right on the rack in my oven at 350 degrees for 1hour and 10 minutes.  Tip, put aluminum foil on a second rack under the potatoes to catch any drips, you will thank me for this later, lol.

I tripled the following recipe to get (4) 8×8 pans.  Mix the following together with your mixer.

5 Cups mashed sweet potatoes, 1/2 cup brown sugar, 1/2 cup milk, 1/4 cup melted butter, 2 eggs, 1 teaspoon vanilla, 1 teaspoon salt, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg.

Fill your pan(s).

Combine the crumb topping and sprinkle it onto the top of your casserole(s).

Crumb Topping (I tripled the following)

1 cup brown sugar, 1/2 cup flour, 1/2 cup cold butter, 1/2 cup chopped pecans. Combine all and cut in the butter until crumbly.  I used my food processor to make quick work of this.

Bake uncovered at 350 for 30-40 minutes, until bubbly and the crumbs just begin to brown.

FREEZER DIRECTIONS:  cover with aluminum foil and freeze.  I put mine in a food saver bag, add the recipe in the bag and seal.  You can also put the pan in a 2 gallon freezer bag and seal or  You  put the potato mixture in a gallon freezer bag and the crumb topping in a quart size bag.  Put both in another bag, label and freeze.

Note:  I put a copy of the recipe in the bag so I don’t have to write the cooking directions, name of dish etc. on the bag.  When I cook the dish I save the recipe for the next time I prepare the same dish.  I have a binder with plastic sleeves in it to store the copies of the recipes in.  🙂

To bake:  Thaw in the refrigerator.  Bake uncovered at 350 degrees for 30-40 minutes.
